How to Relive Your Childhood: Mac and Cheese Style

Childhood is a fickle thing that we wish as adults we can always go back to living. We enjoy the feelings of childhood and in many try to gain back our childhood with the use of bigger toys. Nerf itself turning into a game that not only 10 year olds play as today’s adults try to avoid ‘adulting.’ We also try to relive our childhood in the food that we eat as dinosaur nuggets make a comeback. In many ways instead of breaking out the box of Kraft Mac and Cheese, here is a healthier, and in my own opinion tastier way to take the thoughts and feelings of Kraft Mac and Cheese to a whole new level. This recipe not only provides a great way to give your kids vegetables, it combines flavor with a childhood memory. So give your kids a great memory while also teaching them how to cook with this simple recipe.

 


Homemade Macaroni and Cheese

Recipe provided by Alan Marks of Rock Island, IL

 

Ingredients:

3 tbsp butter

3 stalks celery minced

1 medium onion minced

3 tbsp white flour

1 lb elbow, penne, or cavatappi pasta

1 quart milk

4 cups cheese (sharp cheddar)

Panko breadcrumbs

Parmesan cheese (fresh)

 

Directions:

 

  1. Boil pasta in 1 gallon lightly salted water until al dente. Stir, set aside.
  2. On Medium High heat, in a large dutch oven melt butter. When butter begins to bubble add celery and onion. Sauté in pan until tender.
  3. When onions and celery are tender dust with flour. Stir flour into vegetables until all liquid is absorbed. Continue to brown until a nutty aroma comes from the pot.
  4. Add milk. Lower heat to medium and stir constantly until sauce thickens and sticks to the back of the spoon.
  5. Add cheese. Stir until melted. Fold in pasta. Stir until well coated.
  6. For those who want to be a little adventurous try these add-ins to your homemade Macaroni and Cheese (optional)

Crispy bacon

                         Shredded chicken

                         Can of diced tomatoes drained

                         Substitute ½ cup cheddar for bleu cheese, swiss or other cheese-

                         Add lobster or shrimp

       7. Top with Panko Breadcrumbs and parmesano reggiano and bake in oven for 20 minutes
